Ante-mortem inspection: In the UK, animals are graded on a cleanliness scale of 1 (Clean and Dry) to 5 (Filthy and Wet), and are rejected for slaughter if grade 3-5. This is to minimise the microbiological hazard posed by dirty animals in a slaughterhouse environment, particularly associated with Enterobacteriaceae as a possible human health hazard. Liz..
